Lentil, Sauage and Wild Rice Soup
- 1 cup dried lentils
- 1/2 cup of cooked wild rice
- 2 quarts of water or chicken broth
- 2 tsp of salt
- 1/2 tsp dried oregano, crumbled
- 1/4 tsp dried thyme, crumbled
- Freshly ground pepper
- 2 cloved garlic,minced
- 2 celery stalks,chopped
- 1 yellow onion, chopped
- 2 carrots, chopped
- 1/2# of Kielbasa sausage, cut into sliced
- 1 tbls cider vinegar
Cook wild rice. Rinse lentils and put intolarge saucepan.
Add remaining ingredients except sausage, rice and vinegar.
Bring to simmer, cover and cook 45 minutes.
Add sausage, rice and vinegar simmer uncovered for 15 minutes.
