Wild Rice Tabouleh
- 1 cup cooked Wild Rice
- 1 bunch of parsley, minced (can have some stems)
- 1 bunch of fresh mint (put in as much or as little as you like)
- 1/2 bunch of green onions, fine chopped (or to taste)
- 2 fine diced Roma tomatos
- Freshly squeezed lemon juice (to taste)
- EVOO (to taste)
- Kosher salt (to taste)
Make sure you add tomatoes, lemon juice and oil just before service and salt to taste.
